# Glazed Lemon Bread

- 1 cup minus 1 Tbsp granulated sugar
- 1 Tbsp honey
- 2 eggs (room temp)
- 1 Tbsp lemon zest
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1 1/2 cups flour
- 1/2 teaspoon ground cardamom
- 1 teaspoon baking powder

- 1/4 cup lemon juice
- 1/3 cup sugar
- 1 Tbsp honey

## Instructions

1. **Prep and preheat.** Preheat oven to 350°F. Grease and flour a 9x5-inch loaf pan. If using cold eggs, place them in a bowl of warm water for a few minutes to bring to room temp.

2. **Cream butter and sugar.** In a large bowl, cream together softened butter, sugar (1 cup minus 1 Tbsp), and 1 Tbsp honey until light and fluffy.

3. **Add eggs and lemon.** Beat in eggs one at a time, mixing well after each addition. Stir in lemon zest.

4. **Combine dry ingredients.** In a separate bowl, whisk together flour, salt, cardamom, and baking powder.

5. **Mix batter.** Add dry ingredients to butter mixture alternately with milk, beginning and ending with dry ingredients. Mix just until combined - do not overmix.

6. **Bake.** Pour batter into prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

7. **Make the glaze.** While bread bakes, combine lemon juice, 1/3 cup sugar, and 1 Tbsp honey in a small saucepan. Heat gently, stirring until sugar dissolves. Set aside.

8. **Glaze the bread.** When bread is done, remove from oven and immediately poke holes all over the top with a toothpick. Slowly pour glaze over the hot bread, allowing it to soak in. Let cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.

## Notes

- Do not soften butter in microwave. Either leave a stick of butter on kitchen counter for an hour, or place between two pieces of wax paper and rollout with a rolling pin to soften
- Eggs rise better when they are at room temp
- The cardamom adds a subtle warmth - don't skip it
- For best results, let the glazed bread sit for a few hours or overnight before slicing to allow flavors to meld
