- 1 cup grated cheese (Parmesan or regular cheese)

## Instructions

1. **Heat butter and cream.** Place butter and cream in a large saucepan over medium-low heat. Cook and stir until butter melts and mixture bubbles.

2. **Add seasonings.** Cook and stir for 2 minutes more. Stir in salt, pepper, and nutmeg. Remove from heat.

3. **Blend in cheese.** Gradually stir in cheese until thoroughly blended and smooth. Return briefly to heat to completely blend cheese, but do NOT let sauce bubble or cheese will become lumpy and tough.

4. **Serve.** Use immediately over steamed broccoli, cauliflower, roasted vegetables, fish, or other dishes.
