# Tofu Chorizo

> A flavorful plant-based chorizo alternative made with crumbled tofu and bold spices. Perfect for meal prep, tacos, burritos, or breakfast scrambles.

## Ingredients

- 2 packs of firm tofu
- 1 tbsp coconut oil
- 1 medium onion
- 1 chipotle pepper + 2 tbsp of adobo sauce
- 4 cloves garlic
- 1 tbsp dried chili seasoning
- 1 tbsp soy sauce
- 1 tbsp maple syrup
- Salt to taste

## Instructions

1. **Start with coconut oil.** Start with coconut oil in the pan at medium high heat. Finely dice and saute a whole onion in the pan, adding the sliced garlic once the onions are slightly caramelized and brown.

2. **Prepare the tofu.** Remove any excess water from the tofu packs, then add to the pan. No need to press or squeeze the tofu, the water will cook out in the pan.

3. **Crumble and cook.** Crumble up into pieces into a ground meat texture to get it started then cook out most of the liquid. Once the liquid is cooked out, about 7-10 minutes, you can start adding your seasonings. Once the water is removed, it will start to fry up in the oil added at the beginning.

4. **Add seasonings.** Add all of your dried seasonings first, then the chipotle and adobo, soy, and maple syrup.

5. **Cook until desired texture.** Continue cooking until most of this added liquid also evaporates, about 5 minutes. Depending on how crispy and dry you prefer the tofu, you can cook longer 5-10 minutes more.

6. **Freeze for meal prep.** Place in your molds and freeze overnight!

## Notes

**Storage:** Refrigerates for 4-5 days. Freezes well for up to 3 months.

**Serving Ideas:** Use in tacos, burritos, breakfast scrambles, nachos, or as a topping for rice bowls.

**Texture Tips:** The longer you cook after adding seasonings, the crispier and drier the tofu will become. Adjust cooking time based on your preference.
