# Black Beans

## Ingredients

- 12 oz dried black beans
- 1 onion
- 2 cloves garlic
- 1 knob ginger
- 1 jalapeno, deseeded
- Salt and pepper to taste

## Instructions

1. **Add to pressure cooker.** Add your beans and aromatics to a pressure cooker and cover completely with water.

2. **Cook.** Cook for 18 minutes or until fork tender. Don't season until after cooking to help control salt levels.

3. **Release steam and season.** Once fully cooked, release the steam from your pressure cooker.

4. **Blend or keep whole.** Add salt and pepper to taste then blend slightly with a hand blender.

5. **Adjust consistency.** Depending on preference, you can blend now before freezing or keep the beans whole for more flexibility in the future!

6. **Reduce if needed.** If the beans seem to thin, just pop back onto the burner and reduce slightly until it is your preferred thickness.

7. **Freeze for meal prep.** Add to your molds and place into the freezer overnight.

**Storage:** Refrigerates for 5-7 days. Freezes well for up to 3 months.
