# Cilantro Lime Rice

## Ingredients

- 2 cups of Jasmine or Basmati rice
- 1 cup chopped cilantro
- 1 lime
- 1 cup Kettle&Fire Chicken Broth
- 2 cups water

## Instructions

1. **Rinse rice.** Measure your rice then rinse well until the water runs clear.

2. **Cook rice.** Add your rice, water, and Kettle&Fire broth to the rice cooker and cook on the regular white rice setting.

3. **Cool slightly.** Once fully cooked, remove the rice from the rice cooker and mix to let cool slightly. You don't want it so hot that it will cook the cilantro.

4. **Add cilantro and lime.** After cooling, add your fresh cilantro and lime juice and mix until incorporated.

5. **Freeze for meal prep.** Add to your molds and place in the freezer overnight.

## Notes

**Storage:** Refrigerates for 4-5 days. Freezes well for up to 3 months.

**Rice Type:** Jasmine rice gives a slightly floral flavor, while Basmati is more aromatic and fluffy. Both work wonderfully.

**Serving Ideas:** Perfect alongside Mexican dishes, with grilled proteins, in burrito bowls, or as a base for meal prep containers.

**Stovetop Method:** If you don't have a rice cooker, bring water and broth to a boil, add rice, reduce to simmer, cover, and cook for 15-18 minutes until water is absorbed.
