- 12 medium red skin potatoes, cooked and peeled
- 9 hard boiled eggs, peeled
- 3 celery stalks, thinly sliced

- 1 tbl relish dill relish (or chopped pickle)
- 1 cup of miracle whip
- ½ cup mustard
- ¼ cup milk
- Salt and pepper to taste
- Paprika for garnish

## Instructions

1. **Cook potatoes and eggs.** Cook 12 medium red skin potatoes until tender. Peel and set aside. Hard boil 9 eggs, peel and set aside.

2. **Prep vegetables.** Thinly slice celery stalks. Finely chop the small onion.

3. **Hand mix ingredients.** In a large bowl, combine the cooked and peeled potatoes, hard boiled eggs, sliced celery, chopped onion, and relish. Mix gently by hand.

4. **Prepare dressing separately.** In a separate bowl, mix miracle whip, mustard, and milk. Add salt and pepper to taste.

5. **Combine and chill.** Pour the dressing over the potato mixture and gently fold together until well combined. Refrigerate until ready to serve.

6. **Garnish and serve.** Sprinkle with paprika for garnish before serving.
