# Sweet Potato Plantain Mash

> A naturally sweet and creamy side dish combining roasted sweet potatoes and plantains. Perfect for meal prep and pairs well with any protein.

## Ingredients

- 3 medium sweet potatoes
- 3 ripe sweet yellow plantains
- 2 tbsp grapeseed oil
- 2 tbsp salt

## Instructions

1. **Prep vegetables.** Chop sweet potatoes into large chunks, and the plantains into rounds, slightly bigger than the sweet potatoes since they roast slightly quicker.

2. **Season and roast.** Season the veggies with grapeseed oil and salt.

3. **Air fry.** Place into the air fryer and roast for 20 minutes at 450°F.

4. **Flip and continue roasting.** Take the tray out to flip them then roast for another 20 minutes.

5. **Mash to desired texture.** Remove from the air fryer and place into a bowl. Using a potato smasher, mash the veg into your preferred texture. Mash longer for a smoother mashed potato like texture or leave chunkier for more bite.

6. **Freeze for meal prep.** Pour into molds and freeze at least overnight.

## Notes

**Storage:** Refrigerates for 4-5 days. Freezes well for up to 3 months.

**Oven Alternative:** If you don't have an air fryer, roast in a regular oven at 450°F, checking and flipping halfway through.

**Serving Ideas:** Serve alongside roasted meats, grilled fish, or as a base for bowls.

**Plantain Ripeness:** For best sweetness, use yellow plantains with black spots. Green plantains will be starchy and not as sweet.
